Giving it a chance!
Yes, I know I may be expecting too much from a meal, but when you have kids, finding this kind of solution means going through the day more easily.
I had just had a meeting with Claudia Novais, my dietician at the time, that took me the whole afternoon. So I decided to check on the cookbooks that I had shown her and had left on my table. They were about kids food, recipes for babies and children, and also some of my Disney Cookbooks. And in one of these books, I found what I was looking for, a Loaded Baked Potato Soup. It sounded perfect for the light chilly weather we were having that day!
But as soon as I announced the dinner’s menu, my mom gave an excuse, saying she couldn’t stay for dinner and simply left. My dear husband looked like he wanted to do just the same, but had no such option. I took the lack of enthusiasm from my dinner as a challenge and decided to adapt the recipe for the number of people left (half the portion of the recipe) and the ingredients I had at home. It was a success! So much so that I even got the apologetic face from my husband and an “ It was really good, Mommy” from my son.
Loaded potato soup (I believe the name is due to the fact that the ingredients are similar to baked potatoes)
